MDA values of both samples increased along with the storage (Fig. 6B). The MDA level present in the EPS-treated samples was significantly lower than that of control samples. Thus, EPS produced by L. plantarum MT12 might inhibit free radicals causing the lipid oxidation and microbial growth damaging fruit.4. DISCUSSIONTo date, several studies have only investigated diversity of LAB isolated from fermented eggplants [9; 12]. In our previous study, the protective effects against oxidative stress and biosynthesis of EPS produced by L. paracasei NC4 isolated fermented eggplant in Vietnam was investigated [10]. The present study continued to shed more light on antibacterial and antioxidant potential as well as application of EPS from L. plantarum MT12.Using agar well diffusion assay, EPS from L. plantarum MT12 showed remarkably antibacterial activity against S. typhimurium ATCC 14028, E. coli ATCC 11105, and S. epidermidis ATCC 12228S. typhimurium ATCC 14028. In agreement to this study, 100 mg/mL EPS produced by L. plantarum C7 showed only antibacterial
