496 PROCEEDINGS OF INTERNATIONAL SCIENTIFIC CONFERENCE ON APPLIED BIOTECHNOLOGYin the control samples were rotted and covered by filamentous fungi after 6 days (Fig. 5). EPS-coated samples started showing signs of spoilageFigure 5. Observation of strawberries untreated and (A) and treated with EPS (B) after 6 daysAs expected, both the control and EPS treatment increased weight loss ratio along with the storage at at room temperature. The weight loss ratio of the control increased significantly from 0.3 - 12.6% after 6 days (Fig. 6A). After 2 days, no significant difference was observed for both samples. The weight loss ratio of EPS-treated samples reached 9.6 %u00b1 0.2% after 4 days, which was lower than that of controls. The control samples were found to reach the highest weight loss ratio value of 12.9 %u00b1 0.6%, while EPS-treated samples exhibited weight loss ratio value of 8.1 %u00b1 0.6% on the sixth days.
