This suggests a potential link between the antioxidant capacity (represented by DPPH scavenging activity) and the amount of flavonoids. Since flavonoids are known for their antioxidant properties, it is reasonable to observe this relationship, where higher flavonoid levels contribute to greater DPPH scavenging activity. This result supports the hypothesis that flavonoids play a significant role in antioxidant activity, as indicated by their positive association with DPPH scavenging. The R2 value close to 0.8 strengthens the reliability of this association, although additional factors may still influence antioxidant capacity beyond flavonoid content.Figure 2. DISCUSSIONWhile the role of fungi in the antioxidant activity of the SSF system is widely acknowledged [11], many studies show the critical role of substrate selection in the development of SSFS.
