The extract of pomegranate peel, rich in flavonoids and polyphenolic compounds, demonstrated significant antioxidant activity, likely attributable to the hydroxyl groups present in the phenolic compounds that serve as radical scavengers [26]. The Basidiomycetes demonstrated the greatest activity on pomegranate, with notable interspecies variability in DPPH scavenging activity. P. pulmonarius BV13 and C. prunulusBV18 exhibited the highest activity. The Ascomycetes with the highest DPPH scavenging activity are X. longipes BV1 and H. cucullata BV15. Various mushroom species exhibit distinct amounts of DPPH scavenging activity [27]. Apple pomace had a significant quantity of total polyphenols and antioxidants, as assessed by DPPH scavenging activity [28].5. CONCLUSIONSAt moderate concentrations, flavonoids can stimulate both laccase and catalase activities, although this effect is reduced and even reversed at higher concentrations. Laccase, which is robustly expressed only in Basidiomycetes, enables these fungi to metabolize external flavonoids despite their limited intrinsic ability to synthesize them. While both Ascomycetes and Basidiomycetes exhibited catalase activity, Basidiomycetes showed a higher catalase expression. Furthermore, fungi can liberate free flavonoids from flavonoid precursors found in pomegranate peel, with Basidiomycetes demonstrating a superior capacity to both synthesize and release these flavonoids compared to other fungal types. Surprisingly, Basidiomycetes display distinctive patterns of flavonoid production when cultivated on PDA medium versus pomegranate peel. Among the antioxidant activity measures, DPPH scavenging activity proved to be the least sensitive, revealing minimal differences
