The stabilized and delocalized unpaired electrons of the phenolic ring contributed to antioxidant properties.The FolinCiocalteu reagent method was used to determine the total phenolic content in non-fermented rice bran and fermented rice bran, with the results expressed as gallic acid equivalents (GAEs) (Figure 1).
