MATERIALS AND METHODS 2.1. Materials and chemicalsThe Arabica coffee pulps from Son La were provided by Phuc Sinh Son La Joint Stock Company, Ban Mat, Chieng Mung Commune, Mai Son District, Son La Province.Analytical chemicals used in the study met the standard requirements and originated from Japan, the United States, Germany, South Korea, and China.Bacteria Lactobacillus brevis are from the Department of Microbiology- Food Industries Research Institute. Lactobacillus brevis is chosen because this strain is a heterofermentative lactic acid bacteria, which can improve the complexity of flavour and texture in fermented products.2.2. Methods2.2.1. Experimental designThe Cascara tea production procedure was designed based on the research of Dita Kristanti et al.in 2022 [5] and Lina Oktaviani et.al in 2020 [4] with some modifications.
